✦ Cold pressed at 12 o'clock
All our olives are processed exclusively by mechanical means within the first 12 hours of harvesting, at temperatures below 27°C. This preserves the natural aromas, polyphenols, and character of the oil.
✦ Indigenous Istrian varieties
Buža, Rosinjola, Karbonaca, Istarska Bjelica, Pendolino, Maraiola, Frantoio. Each variety with its own character – from freshness and fruitiness to structure and pungency.
✦ Perfect as a finishing oil
Our oils develop their full aroma raw: over salads, grilled vegetables, pasta, fish or fresh cheese. Not for frying – for enjoyment.
✦ From a family manufactory in Bale
Production is limited by the yield from our olive grove. Quality always takes precedence over quantity – every bottle is the result of precision and consistency.
Istrian Quartet
Four oils, one estate. Our award-winning Valade in a full 0.75 L bottle, alongside three single-varietal oils in 0.10 L bottles. Conceived as a package for those who want to experience Istria through a glass, not through a description.
WHAT IS IN THE BOX
Valade, 0.75 L
Our flagship blend of eight autochthonous Istrian varieties. Gold at the Berlin Global Olive Oil Awards 2026. A harmonious, rounded oil with pronounced fruitiness and a balanced bitterness and pungency.
Istarska bjelica, 0.10 L
Single-varietal oil from the most famous Istrian variety. Second place at the Der Feinschmecker Olio Award 2026 in the medium-fruity oils category. Delicate, elegant, with a fine note of fresh grass.
Rosinjola, 0.10 L
A single-varietal oil with a pronounced character. Herbs, artichoke and a distinct piquancy on the finish.
Buža, 0.10 L
Monovarietal oil from an indigenous Istrian variety. Medium fruitiness, with notes of almond and a gentle bitterness.
WHO IS IT FOR
As a gift for someone who loves to cook and appreciates origin. As a tasting if you haven't yet decided which oil is yours. Like a small cellar on the kitchen shelf, where every dish gets its own oil.
HOW TO USE
Valade for every day: salads, pasta, fish, grilled vegetables. Bjelica for more delicate dishes, white fish, fresh cheeses, new potatoes. Rosinjola for heavy dishes, red meat, pulse soups, toasted bread. Buža for warm and cold starters, tomato, mozzarella, eggs.
Use all oils cold or added at the end of cooking, this way all aromas and polyphenols are preserved.
